{"id":683356,"date":"2025-07-23T08:34:12","date_gmt":"2025-07-23T08:34:12","guid":{"rendered":"https:\/\/www.hoog.design\/hospitality\/?post_type=hoog_project&#038;p=683356"},"modified":"2025-07-23T08:49:56","modified_gmt":"2025-07-23T08:49:56","slug":"le-pain-quotidien","status":"publish","type":"hoog_project","link":"https:\/\/www.hoog.design\/hospitality\/binnenkijken\/le-pain-quotidien","title":{"rendered":"Le Pain Quotidien"},"content":{"rendered":"<p data-start=\"55\" data-end=\"612\">Op de begane grond van een gloednieuw high-end kantoorgebouw in de Bandra Kurla Complex, het nieuwe zakendistrict van Mumbai, zag onze klant de tweede vestiging van de Le Pain Quotidien-franchise voor zich. Het oorspronkelijk Belgische merk, met het huidige hoofdkantoor in New York, gaf een franchise uit aan een Indiaas bedrijf waarvoor wij hun tweede vestiging hebben ontworpen. De gemeenschappelijke tafel \u2013 kenmerkend voor Le Pain Quotidien \u2013 domineert de entree, na de houten en marmeren toonbank die alle beschikbare patisserie en brood tentoonstelt.<\/p>\n<p data-start=\"614\" data-end=\"903\">Onze uitdaging was om zoveel mogelijk ruimte voor het restaurant te cre\u00ebren, waarvan afzonderlijke secties gedurende de dag geopend en gesloten kunnen worden, terwijl er ook voldoende plaats moest zijn voor de halfopen keuken, die vanuit het restaurant zichtbaar is via de doorgeefopening.<\/p>\n<p data-start=\"905\" data-end=\"1134\">De bar, met de afscheiding tussen het voorste en middelste gedeelte van het restaurant, is voorzien van handgemaakt glas-in-lood in een ouderwetse stijl om de rustieke uitstraling van een Le Pain Quotidien-restaurant te behouden.<\/p>\n<p data-start=\"1136\" data-end=\"1496\">Door de personeelsbadkamers, kleedruimtes, baropslag en het benodigde kantoor tot een minimum te beperken, zijn we erin geslaagd een zeer effici\u00ebnt plan op te stellen dat voldoende ruimte biedt voor de walk-in koelkast, de deels open keuken (zichtbaar via de doorgeefopening), voedselopslag, afwasruimte, en natuurlijk maximale ruimte voor het restaurant zelf.<\/p>\n<p data-start=\"1498\" data-end=\"1660\">Een Belgische specialist in het typische LPQ-gips (pl\u00e2tre de Paris) werd ingevlogen om het lokale team te trainen in het aanbrengen van de vereiste wandafwerking.<\/p>\n<p data-start=\"1662\" data-end=\"1990\">Het lokaal aanpassen van deze internationaal gerenommeerde merkvestiging betekende ook dat HVAC-systemen moesten worden voorzien \u2013 een grote uitdaging in een ruimte zonder externe luchttoevoer of koelwater. Ook moesten de gastentoiletten in een specifieke richting geplaatst worden om te voldoen aan Vastu, een Indiase bouwleer.<\/p>\n<p data-start=\"1992\" data-end=\"2136\">Alle technische installaties zijn ondergebracht in de kelder, van waaruit de volledige bevoorrading wordt afgehandeld, gewogen en gecontroleerd.<\/p>\n<p data-start=\"1992\" data-end=\"2136\">Fotograaf: LMC Architects\/Lara De
